Get Fed: S'mores Bars

These are how mine turned out...maybe yours will be prettier!


I’ll admit it. Sometimes when I say I want to go camping I really mean “I want to stuff my face full of marshmallow goo.” Yeah you know what I’m talking about: S’mores.
In my mind, there’s no better combination than graham cracker, marshmallow and chocolate. It’s a staple in the camping pantry, but sometimes I want the taste without having to get bit by mosquitos. So here’s my favorite recipe for making s’mores cookie bars at home:


Ingredients:
• 1 1/4 c flour
• 1 cup graham crack crumbs (trail tip: stick a few graham crackers in a Ziploc bag and smash them up with a spoon belly to get crumbs quick).
• 1 tsp backing powder
• 1/4 tsp sal
• 1/2 c unsalted butter, melted
• 1/2 cup sugar
• 1/4 cup brown sugar (pack it in to the measuring cup)
• 1 egg
• 1 tsp vanilla extract
• 2 king size Hershey’s bars
• 2 c marshmallow fluff or melted marshmallows
Directions

1. Preheat the oven to 350 degrees.
2. Cream together the butter and both sugars until it starts to get light and fluffy. Add in egg and vanilla extract and combine.
3. In another large bowl, mix flour, graham cracker crumbs, baking powder, and salt.
4. Pour the egg mixture into the large dry ingredient bowl and mix throughly to make your dough.
5. Split dough in half and press one half into the bottom of a greased 8x8 pan.
6. Layer on the chocolate bars to cover the dough.
7. Spread marshmallow fluff over the chocolate bars.
8. Roll out the other half of the dough and layer on top of the fluff. (Trail tip: Ok, my dough was too wet, so I took globs of it in my hands and flattened them out. Then I mushed it around with my fingers until it covered the fluff evenly.)
9. Bake for 25-30 minutes. Don’t cut until completely cool!
10. Enjoy, but don’t overdo it. These things are RICH!
